Well, his birthday came around so I FINALLY made him carrot cake. Carrot cake to me is one of those flavors that everyone likes, but no one would pick as their favorite. But, just to prove me wrong, my cousin TJ and her boyfriend TJ visited the week after, and asked for carrot cake. I used this recipe from Smitten Kitchen, which is my general go to for good recipes. Ans like most SK recipes, it didn’t disappoint. The Maple Cream Cheese frosting was especially good. You can tell I spent a bit more time on TJ’s compared to George’s, but I am pleased with my carrots on both. I think this is the fist time I’ve decorated with cream cheese icing, and it’s difficult because it gets so much squidgier over time. By the last few carrots on TJ’s I was working as fast as I could just to keep everything from drooping.
The cake worked out great, A- for carrot cake.
