Our resident Minnesotan left last week to go back to grad school. He loved Paula Deen’s Red Velvet Cupcakes last time I made them, so this time I made him Smitten Kitchen’s version. This cake was MASSIVE. I ran out of the cream cheese icing, so I had to use some of my store bought stuff. It all turned out well. The icing was much softer than normal, hence the droopage on the side-dots. But it was delicious. Good luck, Ben!
